This is a super healthy and delicious meal that can be made under an hour.
One of the main reasons why Susannah created her sauces was so they could be used to make easy, quick and healthy meals. But most importantly her sauces are gluten free, low in salt and free from e-numbers, artificial additives and preservatives. They are all homemade and wonderfully fresh!
I had the pleasure of photographing all her amazing sauces, my personal favourites are the butterscotch (awesome with popcorn) and scrumptious savoury (delicious with steak!)
One of my Photography Packages is a Recipe Shoot. Susannah loved the idea of and immediately got her recipe thinking cap on. She even made up a fresh batch of her Tasty Tarragon Mayonnaise especially for this shoot … so lets get cooking!
Preparation time: 10 minutes
Cooking time: 30 minutes
x6 skinless chicken thighs*
Table spoon of olive oil
X1 jar of Susannah’s Tasty Tarragon Mayonnaise
Bunch of watercress
110 grams of green grapes, halved and de-pipped
X3 spring onions finely chopped
X1 small lettuce
X8 new potatoes
1.) Brush thighs with olive oil and cook in the oven at 180 degrees C for 25-30 minutes until thoroughly cooked.
2.) Once cooked and cooled down remove bones and tear the chicken into long pieces and place in dish
3.) Pour jar of Susannah’s Tasty Tarragon Mayonnaise over the chicken pieces and mix well so all the chicken pieces get a good coating.
4.) Serve on bed of lettuce and mix in your grapes, watercress, spring onions and new potatoes. Add pinch of salt and pepper, to taste.
*As an alternative you could also poach a whole medium sized skinned chicken. Susannah’s secret poaching recipe: She poaches her chicken in a fish kettle with carrots, celery, onions, thyme, bay leaves, parsley and peppercorns. She brings it up to the boil very slowly and let’s it boil for 7 minutes. She then turns off the heat and let’s the chicken sit in the liquid for 12 hours.
Susannah even told me that this is her daughters favourite summer dish, and always requests it specifically for her schools sports day. A dish the whole family will love and enjoy!
